Can Artificial Evolution target text that is technically a creature type but is used in a different context? I thought so, as long as it's not rules text or reminder text. I.E. can I use Artificial Evolution to change the text on Avatar of Me "Avatar of Me's color is the color of your ouphes?" And if so, would that now mean that if I had two Brown Ouphes in play, Avatar of Me would be Brown? And if I had a Faeburrow Elder in play and tap it, would I be "forced" to add one Brown Mana?


It can only change words being used in the context of being a creature type.

does using artificial evolution to make acornelia look for shapesifters make it trigger of of any art featuring a living creature?


No, to count as a shapeshifter, the art would have to show you shapeshifting in some way.

Hacking Acornelia with Artificial Evolution (for example, changing "squirrel" by "human"), could it be considered as breaking Acornelia?


It’s a thing you can do. What art pictures a human can get a bit tricky as there are a lot of human-like other races.

how does Earl of Squirrels handle text changing effects that change creature types in rules text? for instance, if I cast Artificial Evolution to change "Squirrellink" to "piratelink", for instance, does it make black 2/2 menace pirate creatures, or does it make 1/1 green pirate creatures? in other words, does the ability "know" what tokens certain types get?


They will still be 1/1 green creatures, just with a different creature type.
