Why isn't giant ox a giant?

Giant is a kind of creature and not a descriptor of being large (aka it’s the noun and not the adjective).

Giant Ox, is an Ox, but not a Giant. What gives? (I know Giant is a relevant creature type in Kaldheim, but still...)

The creature type Giant means you of the race Giant, not that you are large. Giant Spider is giant, but not a Giant.
